- 1 pumpkin
- Paper towels
- Sugar (same weight as dried pumpkin)
- 1 or 2 sliced lemons (given the amount of pumpkin)
- Peel and empty pumpkin.
- Dice pumpkin and let dry on paper towels overnight.
- Weigh diced pumpkin (to determine amount of sugar).
- Place diced pumpkin in large pot with sugar and lemon slices.
- Boil until diced pumpkin is translucent, no more.
- Pour into jars.
