Pumpkin Jam

Ingredients

  • 1 pumpkin
  • Paper towels
  • Sugar (same weight as dried pumpkin)
  • 1 or 2 sliced lemons (given the amount of pumpkin)

Instructions

  1. Peel and empty pumpkin.
  2. Dice pumpkin and let dry on paper towels overnight.
  3. Weigh diced pumpkin (to determine amount of sugar).
  4. Place diced pumpkin in large pot with sugar and lemon slices.
  5. Boil until diced pumpkin is translucent, no more.
  6. Pour into jars.
