- ½ cup vegetable oil
- 1 ¼ cups brown sugar
- 2 eggs beaten
- 2 ½ cups all purpose flower
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ginger
- 1½ teaspoons salt
- 1 ½ cups pumpkin purée
- 1 cup dried raisins
- 1 cup walnuts.
Instructions
- Cream together vegetable oil, brown sugar and eggs.
- Sift dry ingredients and incorporate wet mix alternating with pumpkin purée.
- Fold in dry raisins and walnuts.
- Spoon drop mix on lightly greased cookie sheet.
- Bake at 375°F (190°C) in preheated oven 12 to 20 minutes depending on size.
