Ceamy Pumpkin Soup

Ingredients

  • 1 pumpkin 1,5 Kg (3lbs)
  • 5 ml (1 teaspoon) vegetable oil1 diced onion
  • 1 diced garlic clove
  • 750 ml (3 cups) chicken stock
  • 250 ml (1 cup) apple juice
  • 2 ml ( ½ teaspoon) cinnamon
  • 1 ml ( ¼ teaspoon) nutmegsalt & pepper to taste
  • 3 apples, cored, peeled and diced
  • 125 ml ( ½ cup) milk

Instructions

  1. Empty, peel and dice pumpkin.
  2. Steam cook for 30 – 35 minutes, or until tender.
  3. In a pot heat oil, add onion & garlic. Cook until translucent.
  4. Add ckicken stock, apple juice, cinnamon, nutmeg and diced pumpkin.
  5. Salt and pepper to taste.
  6. Simmer 10 minutes.
  7. Add diced apples, simmer 10 minutes.
  8. Place in a culinary robot and blend to desired texture.
  9. Add milk.
  10. Garnish with sliced apples.
